Main Ingredients
- 8 Chicken (Any part)
- 1 can Coconut Milk
- 3 Garlic Gloves
- 3 fresh red chillies (deseeded)
- 5 dried chillies (deseeded)
- 2 inch ginger
- 1 galangal
- 5 candlenuts
- 5 shallots
- 1 cinnamon sticks
- 4 cloves
- 4 cardamom
- 2 star anise
- 1 pinch coriander seeds
- 1 pinch cumin
- 3 tbsp tamarind pulp
- 2 lemon grass
- 4 peeled potatoes
- 5 Lime leaves
Method
- Add all ingredients except cinnamon stick, chicken, potatoes into the blender to mix roughly. Add a little coconut milk if necessary to facilitate the blending. Save a lemon grass and 2 lime leaves for later use.
- In a large pot, add the blended ingredients. Stir fry for about 2 mins.
- Add a little bit water if the paste is too thick.
- Add cinnamon, chicken, potatoes, 2 lime leaves, 1 uncut lemon grass into the pot and cook for roughly 20 mins on medium heat.
- Cover with lid when you see too much water evaporated.
- Add coconut milk and continue cooking for another 15 mins.
- Add salt to taste.
